Lemon rice is the base of chitranna, a popular south Indian dish. To make a simple chitranna, heat some sesame oil in a pan and fry 1 tsp mustard seeds, 1 tsp split and skinned black gram, 2 dry red chilies, 1 tsp chopped green chilies, and ½ tsp turmeric powder on a low heat.

Add the Lemon Pepper Rice to the pan and warm through, then serve and season with cashews and a pinch of salt.
