How do I prepare Pastabilities’ Vegan Mac and Cheese Pasta Ruffles?
You’re making a dish for four so you’ll need nothing less than a medium-sized pot. Bring about 8 cups of water to a boil and add the pasta. Once the water starts to boil again, reduce the heat and let it gently boil for around 6 to 7 minutes.
Drain the pasta in a colander and do not rinse! Take the same pot and add a third cup of any unsweetened milk (preferably almond milk, but that’s your call!) and some vegan butter. Stir until the butter melts. Then add the vegan cheese mix a bit at a time while continuing to stir.
When all that has been combined, add the pasta back to the pot and gently stir. Serve immediately!
