Here’s what you need:
Main Ingredients
- 1/2 medium sized cauliflower
- 1/2 medium sized red onion
- 3 to 4 carrots
- 1 cup of frozen peas
- 1 cup canned corn
- 1 to 2 cloves of garlic
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp extra virgin olive oil or sesame oil
- 2 tbsp of Coconut Secret Coconut Aminos Seasoning Sauce (Or soy sauce)
- 1/4 cup of chopped green onion
- Sriracha or chili oil for drizzling
- Lime for drizzling
Directions
Over medium-high heat, heat up your oil in a large wok or pan.
- Add your chopped or crushed garlic to the oil and stir for 1 to 2 minutes.
- Add in your chopped carrots and red onions to the pan and continue cooking for 3 minutes, or until the vegetables begin to soften.
- Take your half head of cauliflower and chop it to be rice sized. You can rice your cauliflower easily by putting smaller pieces in a food processor, or you can take your cauliflower and grate it on a cheese grater.
- Add your cauliflower, peas, green onion, corn, and coconut aminos (or soy sauce) into the pan.
- Cook the mixture for 10 minutes, or until the cauliflower becomes tender, making sure to stir often. Add salt and pepper to taste.
- Optional
If you like your dishes a little more spicy you can drizzle sriracha or chili vegan sauce onto your cauliflower fried rice and give it a squeeze of lime juice on top.
