
Cauliflower Fried Rice

Ingredients
1/2 medium sized cauliflower
1/2 medium sized red onion
3 to 4 carrots
1 cup of frozen peas
1 cup canned corn
1 to 2 cloves of garlic
1/4 tsp salt

1 tbsp extra virgin olive oil or sesame oil
2 tbsp of Coconut Secret Coconut Aminos Seasoning Sauce (Or soy sauce)
1/4 cup of chopped green onion
Sriracha or chili oil for drizzling
Lime for drizzling
Directions
Over medium-high heat, heat up your oil in a large wok or pan.
Add your chopped or crushed garlic to the oil and stir for 1 to 2 minutes.
Add in your chopped carrots and red onions to the pan and continue cooking for 3 minutes, or until the vegetables begin to soften.
Take your half head of cauliflower and chop it to be rice sized. You can rice your cauliflower easily by putting smaller pieces in a food processor, or you can take your cauliflower and grate it on a cheese grater.
Add your cauliflower, peas, green onion, corn, and coconut aminos (or soy sauce) into the pan.
Cook the mixture for 10 minutes, or until the cauliflower becomes tender, making sure to stir often. Add salt and pepper to taste.
Optional
If you like your dishes a little more spicy you can drizzle sriracha or chili sauce onto your cauliflower fried rice and give it a squeeze of lime juice on top.
