What is fermented cacao?

Most cacao powders are fermented because fermentation intensifies the cacao flavor and aroma. It also reduces the phytic acid content of cacao, making it easier to digest and giving better mineral absorption. 

However, many cocoa products are treated with high temperatures, Dutch (alkali) processed, or irradiated. While this kills bacteria, it can reduce the benefits of raw cacao. 

Wildly Organic’s Fermented Cacao Powder is minimally processed: it is made using non-alkalized cacao pods that are naturally fermented in banana leaves for three to five days. This ensures that it is full of flavor while retaining all the benefits of raw cacao.

Is raw cacao healthier than other cacao powders?

Generally, raw cacao is less processed. It contains more antioxidant flavonoids than green tea, red wine, and blueberries. It is also high in fiber and a great source of protein and iron.

Wildly Organic’s Fermented Cacao Powder is extracted at a lower temperature than many cocoa powders. Each batch is lab-tested for antioxidant activity (as represented by an ORAC score of 1086 μmol TE/g) This ensures the safety and purity of the product.
