Brother and sister Aubry and Kale Walch started the Herbivorous Butcher in 2013. They used to host dinners, trying to improve on their vegan meat recipes to impress friends. During one of these dinners, they came up with the idea to open their own shop! The siblings still own, manage, and work in the flagship store today.
