I’m confused! Why does my Mao Feng Green Tea taste bitter?

Not to fear, this can happen. Occasionally, pouring boiling hot water straight from the kettle can be a little too harsh for more delicate teas. White, green, and oolong teas are all a bit more sensitive to heat and can’t really handle water over 200 degrees.

Teapigs suggests using water that's around 176 degrees Fahrenheit and steeping for about 3 minutes to get the perfect brew every time, without a bitter aftertaste.

If you don’t have an electric kettle with temperature settings and you don’t have a thermometer, there is another solution. Bring the kettle to the boiling point, then switch off and let it sit for 5-10 minutes to cool down. This should be a better temperature for those delicate little leaves.
