What Does Raaka Do With Its Cacao Beans?
Raaka’s Cacao beans are left unroasted, but they still go through a natural heating process that brings out the cacao beans' unique flavors.
After harvesting, the cacao beans are taken out of the hard fruit casing but are left in the fleshy fruit pulp. This is known as “wet cacao”. The wet cacao is left to ferment in wooden boxes for 4-7 days, whereby the fleshy pulp heats up to around 120°F and subjects the cacao beans to heat which develops their flavors and aromas.
After fermentation, they’re left to dry in the sun or wind tunnels. Then, they’re transported to Raaka’s factory in Brooklyn and then blended into all different recipes!
