Directions
Place 1 cup of almonds into a food processor fitted with an “S” blade and process on high for about 30 seconds.
Next add in the rest of your ingredients and process on high until everything is blended up into a sticky, uniform dough. You want the dough to feel sticky on your fingers and be crumbly. If not, simply add in a small amount of water ( around 1-2 teaspoons).
Once everything has been processed scoop roughly around 1 tablespoon of dough into the palm of your hand and start to roll into a ball. Repeat until all the dough is gone and you have around 12 energy balls.
Place in the freezer for 15 minutes, in an air-tight container to help set the shape.
You can store these in the fridge for up to 2 weeks or 1 month in the freezer.
*If dates are super dry, try soaking them in some hot water for 5-10 minutes to soften before loading them into the food processor.
Enjoy!
