Potato and Spinach Savory Pancakes

Ingredients

  • 8.8 oz ap flour
  • 650 ml soy milk
  • 1/2 tsp salt
  • 1 tsp olive oil
  • 1/2 tsp baking soda
  • 21 oz boiled spinach
  • 8 oz mushrooms
  • 1/2 cup vegan cheese
  • Olive oil, salt, pepper

Method

  • Quickly pan fry the mushrooms with 2 tbs olive oil till they start to get gold and then add the spinach. Stir for a couple of minutes and set aside.
  • Warm the milk, place it in a bowl, add the yeast and whisk to combine. Slowly sift the flour into the bowl, stirring continuously till the mix turns to a creamy batter. Add the salt and the oil, stir again and set aside.
  • Heat up a pan with a little oil until hot and add in some batter. Tilt the pan and spread the mix evenly.

  • Fill each cream with a quarter of the spinach mix, roll and serve.
