Colorful Cauliflower Pizza

Cauliflower crust pizza is an absolutely delicious way to enjoy everything you love about pizza but now with a healthier crust. Top your cauliflower pizza with your favorite ingredients and add some sliced bell peppers for a pop of color on this yummy dinner recipe that is sure to please.

Ingredients

  • Cauliflower Pizza Crust Ingredients:

  • 1/2 medium head of cauliflower (4 cups of small cauliflower florets)
  • 3 tbsp ground flax seed
  • 1/4 cup of water
  • 3/4 cups of white rice flour
  • 1/2 cup of almond flour
  • 1 tbsp dried oregano
  • 1 tsp of salt
  • Toppings:

  • 1 jar of your preferred pizza sauce (We love Raos Pizza Sauce!)
  • 2 cups of mushrooms
  • 2 cups of chopped peppers
  • 1 tomato, sliced
  • Fresh basil for garnish

Method

  • Preheat your oven to 400F. Line a baking sheet with parchment paper and set aside for later.
  • Chop your cauliflower into small pieces or florets to get it ready for the crust. Cook your cauliflower in boiling water for about 15 minutes until fall-apart soft and then drain in a strainer.
  • Once your cauliflower has cooled a little, place in a clean dish towel or cheese cloth and squeeze as much moisture as you can from the florets. You can do this over a bowl or the sink. Ideally you want your cauliflower to release about 2/3 cups of water. At that point your cauliflower should be dry and ready to be used in the crust.
  • Place your cauliflower into a bowl and add your flour, flax seed, salt and dried herbs. Add 1/4 cup of water into the bowl and begin to incorporate all ingredients together by stirring and mixing.
  • Form your crust mixture into a ball and place onto your baking sheet. Slowly spread the crust into a circle until it is about 1/4 inch thick.
  • Place your baking sheet into the oven and bake for 40 minutes, or until lightly browned with crispy edges.
  • Remove your crust from the oven and add your pizza sauce and toppings of your choice. Once you've topped your pizza with all your favorite flavors, bake for an additional 8 minutes.
  • Allow your pizza to cool for 5 minutes. Slice, and enjoy!
