- 12 oz Pasta shells
- 2 Zucchini
- 1 can Chickpeas drained
- Olive oil
- 1. Cut the zucchini in thin round slices and place them in a pan with two spoons olive oil.
- 2. Cook for 7/10 minutes while stirring gently, till gold and tender. Add the chickpeas.
- 3. Cook the pasta according to instructions and when ready drain it and place it in the pan with the vegetables. Stir gently to combine.
- 4. Add an extra spoon of oil, season with salt and pepper to taste, mix gently and serve.
