What is the best Vegan Pasta Sauce Recipe?

Looking for a quick, easy, and delicious creamy pasta sauce? We’ve got just the thing. This recipe is adapted from the minimalist baker - she’s an amazing plant-based chef! We highly recommend checking her out as her recipes are mouth-watering delicious! 

1 1/4 cups raw cashews. Soak for an hour in boiling water before using

3-4 Tbsp nutritional yeast (plus more for cheesier taste)

2-3 cloves garlic 

1/2 tsp sea salt

1-2 Tbsp vegan parmesan cheese. Optional, plus more for serving

1-2 cups unsweetened plain almond or rice milk (you can also use water if you want a less creamy consistency)

1 vegetable stock cube

Chuck all the ingredients into a blender and blend until smooth. Throw the mixture into a pan and bring to a boil. Reduce to simmer and keep stirring. Add milk or water until the mixture is the desired consistency, and then add to pasta. Enjoy!
