Is Purely Elizabeth Ancient Grain Pancake Mix really gluten-free?
Yes! Although it says ancient grain, some grains are not actually grains. Some are actually just seeds or even grass. Buckwheat and teff, the two hero ingredients, are considered common ancient grains that are completely gluten-free.
Other ingredients in the mix like almond flour and arrowroot flour are gluten-free. Another one, the Tigernut flour, is made of root vegetables (surprisingly not nuts) and is also gluten-free.
The recipe says I need eggs to make the pancakes! Is there any substitute for it?
