This super-duper aromatic wine gets its intensity from being macerated on its skins for 4 days and remaining unfiltered. So much going on - tropical flowers (orange blossom and elderflower) and fruits, (litchee, tangerine, and white peach) and luscious candied citrus and ginger with honey. The lack of sweetness on the palate is a surprise, but a great one. Instead of heavy fruit, this wine is refreshing and ethereal.
A really fun and charismatic wine! The deep and slightly hazy appearance shows the low intervention winemaking and lite yeasty notes lead you to signs of spontaneous fermentation. Lovely! I prepared a roasted cauliflower with peppers and quinoa and it paired great with this wine!
Still wine obtained from Malvasia Aromatica grapes, de-stemmed and left to macerate without temperature control, for about 10 days. Soft pressing aging in steel for about 11 months. It presents itself to the eye with a slight haze given by the absence of filtration, intense yellow-gold color. Strong aromaticity of tropical fruits, among which the litchis and mango, orange blossom floral. The taste is fine and delicate supported by a pleasant tannicity typical of the grape.
Denny Bini took over his family winery 20 years ago (2003) and has become a rockstar of a winemaker, known for leaning into the traditional methods and styles of Lambrusco. All fermentation is carried out using indigenous yeasts and re-fermentation takes place in the bottle spontaneously following ancient local recipes. The wines are funky, artisanal, and full of personality!
