Everyone loves mac and cheese and it has been a comfort food for all Americans for decades. If you fear that following a strict vegan diet will forbid you from enjoying mac and cheese, then you cannot be more wrong. You can easily replace the ingredients in the recipe with vegan alternatives. It will still taste the same and your loved ones will not be able to tell the difference either.
To start, boil 2 cups of potatoes and 1 cup of carrots in a pan for around 20 minutes. Cook vegan pasta separately, drain it and set aside. Mix 1/3 cup extra virgin olive oil, ½ cup unsweetened vegan milk, ½ cup nutritional yeast, 1 tbsp lemon juice, 1 tsp salt, ½ tsp garlic powder, and ½ tsp onion powder in a blender. Add the cooked potatoes and carrots, and blend until smooth. When done, mix it with the cooked pasta in a pot and serve hot.
